28% White Chocolate with Colombia Roasted Coffee and Roasted Cocoa Nibs
Think Tiramisu for the flavour of this shard. I have paired this creamy white chocolate with Colombia-Costa Rica finely ground coffee from Coffee Gems Roastery. The smell of this coffee alone is truly divine. Its got nutty, caramel and smooth chocolate notes hence why I thought it would match perfectly with this chocolate.
Then I added some roasted cocoa nibs on the top for a crunchy texture to give you some savoury cocoa notes. The combination of the chocolate, coffee and nibs is magical.
We are really proud of how this shard turned out, took a little while to get the combinations right... but we got there and it is truly something special. I have had people who don't like coffee say they love this shard and cant put the packet down. Now that is saying something :)
